Eggy Bread is easy!
Beat 3 eggs per 2 slices.
Add 1 tbsp milk.
Add 1 tsp parsley (dried or fresh…if you’re on a boat, it’s probably dried!)
Salt & Pepper
Soak the slices of bread in the eggy mix, turning until well absorbed.
In the meantime, cook your bacon how you like it (oven on a rack is best, or grill). We like it crispy for this one!
Heat your pan. Put a dollop of butter or coconut oil (we used coconut oil) and fry each side of the bread until slightly golden or until the egg is cooked through.
Peel avocado and scoop on top of eggy bread, top with bacon and some sweet balsamic drizzle!
