Roasted Honey Lamb

This will take a couple of hours…mostly cooking time.

Buy some lamb from a local butcher. We bought some lamb shoulder for this meal, enough for 2 people.
Pat meat dry, then rub with lots of salt, pepper, olive oil and crushed garlic.
Preheat oven to gas mark 4.
Heat up your frying pan with a bit of coconut or vegetable oil (not olive oil), when the oil is slightly smoking, brown all sides of the meat…warning: it will be a bit smoky!

Place meat on a baking pan, baste with some honey. Put in oven for 1.5 hrs, check and turn meat, then put in for another half hour.

Alternative cooking:

Instead of browning the meat, you could heat the oven to gas mark 7, after 15 mins of the lamb marinating in the rub, put it in the hot oven for 20 mins and then turn heat down to gas mark 4 for 1.5 hours (depending on the size of your meat!)

This is what worked for us but you might want to do more research on meat sizes and oven temperatures 🙂 Enjoy!
